Trans Fatty Acids
Trans fatty acids are fats that are produced when liquid fat (oil) is turned into solid fat through a chemical process called hydrogenation. Sources of trans fatty acids include hydrogenated and partially hydrogenated vegetable oils that are used to make margarine, shortening, snack foods, fried foods, and baked goods. Trans fatty acids are considered unhealthy as they have been shown to raise blood cholesterol and increase the risk of heart disease.
